Promises, promises. I said I would post the recipe for the beans and cornbread from earlier in the week. I’ve made plenty of beans in my life, but this is seriously about as simple as it gets and I really like it with skillet cornbread instead of rice, for a change. Once again, thanks to The Pioneer Woman for the inspiration. This definitely leaves you feeling full and satisfied.
I didn’t have any cilantro on hand, but I chopped up some white onion, shredded some sharp cheddar and added a dollop of sour cream.
This skillet cornbread is way better than Jiffy’s out of the box and I love Jiffy’s out of the box cornbread.
