The Easiest, Most Delicious Roasted Red Pepper Hummus

Seriously, it doesn’t get easier than this. You throw all of the ingredients into a food processor, press the button and VOILA!   Delicious, healthy hummus.  It takes less than five minutes. I made this for the Oscars last Sunday night.

A quick accompaniment:  Homemade Pita Chips.    Buy a bag of pita bread.  Slice it like a pizza so you have wedges.  Line them up on a baking sheet.  Give each one some space. Spray olive oil over them and toss some sea salt over them.  Bake at 400 degrees for 10 minutes.  That’s it.

They made us cupcakes! That’s Oscar on top.  He’s cute, but he kind of looks like a gingerbread man.

Congratulations to Ben Affleck and “Argo” for Best Picture of the Year.  But Ben, a little tip for next time you accept an Oscar.  Don’t tell the whole world that your marriage to Jennifer is “hard work”.
